Amino Acid and Mineral Profiles of Fresh Snakehead (Channa striata) Meat to Potential as an Immune System

Abstract During the COVID-19 pandemic, Riau Province experienced an increase in fish consumption as effort to improve immune system preventing transmission of COVID-19. The is line with production snakehead commodity fisheries Province. However, research on nutritional content from waters has not been reported. So, this study aimed characterize meat’s amino acid and mineral profiles. Snakehead was obtained Bengkuang Lake, then analyzed physically (fish freshness detection, morphometrics, body proportions) chemically (proximate, acids, minerals). results showed that meat fresh condition a length 30.33 cm weight 252 g, which dominated by proportion part 37.38%. Based chemical characteristics, contained 16.99% protein 1.96% ash. also had dominant namely leucine 0.539% glutamic 1.446%. Furthermore, minerals were Fe 6.217% Zn 2.235%. presence acids leucine, acid, play important role wound healing process system.
